We all love a great deal, especially when that deal is a sale on bananas. But what happens when you buy too many and don’t have time to eat them all? Once they turn brown there isn’t much you can do with a banana.
One thing you can do is make banana bread! It’s so simple and you can get creative with ingredients you already have around the kitchen. No nuts use chocolate chips, no raisins try diced apples.
- 3 well ripened bananas
- 2 cups flour (your choice)
- 1/2 cup light brown sugar or pure cane sugar
- 2 eggs
- 1 tsp vanilla
- 2 tbsp coconut oil or similar
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/2 cup chocolate chips or nuts or raisins
Preheat oven to 325 degrees. Mash the bananas in a bowl the mushier the better.
Mix all the dry ingredients together in a separate bowl.
Do the same with the wet ingredients.
Then mix everything together.
Pour into a greased glass pan
Put into oven and let it bake for 40 minutes. You will know it’s ready when the sides are golden brown and the top starts to crack apart.
