Need a fun and eye appealing breakfast for your family? How about some rainbow crepes.
They’re delicious in taste and easy to make.
- Runny pancake mix (you can use a premix)
- Different food coloring
- Whipped cream
Make your pancake mix runny. Separate your mix into different bowls and add about 10-15 drops of food coloring.
At medium heat lightly butter your pan. Pour a good amount (depends on the size you want) of one color of pancake mix and swirl your pan to get it to spread around.
Let cook for about one minute and a half on each side. Flip using a spatula knife.
Put on a wire rack and let cool. Once you have enough of the crepes cooled. Start with one color and spread some whipped cream then layer with a different color and repeat with the whipped cream.
Make sure they are cooled. I made the mistake of layer my crepes with the whipped cream while they were warm and it melted away.
You can layer them however high that you want. If you’re not serving them right away you can put them in the fridge to keep the whipped cream thick.
If you want to get really creative add different colors to your pan and swirl them together.
