How often do you get home and realize you wanted to stop and get some corn in the cup but didn’t? Happens a lot. Especially to me. So I decided to make my own corn in the cup. With just a few ingredients you can always have corn in a cup anytime!

Ingredients: 

  • A few ears of corn (remove as much of the hairs)
  • Sour cream or mexican crema
  • Shredded cheese any variety. 
  • Parmesan cheese 
  • Chili powder 
  • Cayenne powder
  • Garlic salt or regular salt
  • Lemon pepper seasoning
  • Optional: tomatoes, avocados and onions. 


Put them on the grill. While your at it maybe add some other veggies if you like. Roast the corn until the husk turns crispy. Turning the corn over to roast all the sides. 


Once you have roasted all the sides of the corn. Peel back the husk and put them back on the grill. Be very careful when doing this. The corn will be hot and release a lot of hot steam. You can wear oven gloves or use some thongs. 

Roast them for just a bit longer to get some grill marks on the kernels. While they are roasting make your seasoning to sprinkle over your corn. You want to use a lot of chili powder as your main seasoning and then add the rest to taste. Sprinkle the cayenne, garlic salt and lemon pepper into a mixing bowl. Mix it well and you are done. Chop up some tomatoes, avocados and onions into small pieces about the size of corn kernels. 

Shave off the kernels and put them in a cup. (Solo cup, glass pint cup or even a bowl). If you chopped up some veggies throw those in as well. Sprinkle with your chili corn seasoning, parmesan cheese, shredded cheese and top with sour cream or mexican crema.
