January 8th is the King’s birthday. Elvis would have been 82 years old. Elvis was a foodie. He loved to eat and he did it big, just like the King of Rock and Roll should be expected to do it. He had a craving for bananas and peanut butter which eventually became a staple in his diet. He started to incorporate them in his daily meals. He had a biscuit made with all his favorite ingredients. The Fat Elvis Biscuit.

This recipe is broken down into two parts. The first is the Biscuit then the filling.

Biscuit ingredients:

-2 CUPS all purpose flour

-2 TSP baking powder

-1/2 TSP baking soda

-1/2 TSP salt

-1 1/2 CUPS powdered sugar

-1 1/2 bananas (mashed)

-1/2 CUP honey roasted peanuts

-1/3 CUP frozen unsalted butter

-1/2 CUP buttermilk

Preheat 450. Sift first five ingredients in large bowl. Add mashed bananas and chopped peanuts to mixture. Cut in butter until well combined. Pour in buttermilk until mixture is slightly moistened, add more if needed. On a floured surface turn out mixture, gently. Form into a ball, flatten out into a circle about 1/2 inch thick. Using a Biscuit cutter of choice, dredge through flour and form biscuits. Place biscuits on a non-stick covered cookie sheet and bake until golden brown about 10-12 mins.

Filling ingredients:

Fried bacon

Sliced bananas

Peanut butter topping

-1/4 CUP powdered sugar

-1/3 CUP creamy peanut butter

-1TBSP skim milk

-1/4 TSP vanilla

Combine the four ingredients in a small bowl. Microwave in 30 second increments, until peanut butter is softened. Mix until smooth.

Spread the peanut butter moisture on 1/2 of the biscuit, add sliced bananas and bacon. Top with remaining 1/2 of biscuit. Enjoy!
